Ingredients:

  • 1 1/2 cups spelt flour

  • 1 cup flour

  • 1/2 cup rolled oats

  • 1/2 teaspoon baking soda

  • 1 teaspoon baking powder 

  • 1 tsp cinnamon 

  • 2 flax eggs (1 tablespoon ground flax with 3 tablespoons warm water=1 egg)
  • 1 can pureed pumpkin
  • 2 teaspoon vanilla 
  • 1/4 myokos cashew butter or 1/4 cup apple sauce
  • 1 cup brown sugar
  • 1/3 cup flax milk
  • 1/4 cup pumpkin seeds
  • 1/2 cup chocolate chips

     

Directions:

  1. Preheat oven to 375*
  2. Whisk dry ingredients together in a large bowl. Then push the dry ingredients to the side of the bowl to create a well.
  3. Add wet ingredients into the well.
  4. Gently stir together and combine with dry ingredients. Do not over mix.
  5. Pour in to a prepared loaf pan. Use parchment paper or non stick spray. 
  6. Bake for 60 minutes. Allow to cool then slice.
