Ingredients:

1 1/2 cups spelt flour

1 cup flour

1/2 cup rolled oats

1/2 teaspoon baking soda

1 teaspoon baking powder

1 tsp cinnamon
- 2 flax eggs (1 tablespoon ground flax with 3 tablespoons warm water=1 egg)
- 1 can pureed pumpkin
- 2 teaspoon vanilla
- 1/4 myokos cashew butter or 1/4 cup apple sauce
- 1 cup brown sugar
- 1/3 cup flax milk
- 1/4 cup pumpkin seeds
- 1/2 cup chocolate chips
Directions:
- Preheat oven to 375*
- Whisk dry ingredients together in a large bowl. Then push the dry ingredients to the side of the bowl to create a well.
- Add wet ingredients into the well.
- Gently stir together and combine with dry ingredients. Do not over mix.
- Pour in to a prepared loaf pan. Use parchment paper or non stick spray.
- Bake for 60 minutes. Allow to cool then slice.
